Breakfast Quinoa

I love making this for breakfast – if I have leftovers, I put them in the fridge for tomorrow morning!

1 cup uncooked quinoa

2 cups water

1 tsp cinnamon

1/4 tsp sea salt (optional)

1 green apple, chopped

1 cup fresh or dried unsweetened blueberries or cranberries (optional)

Put all ingredients into saucepan over medium-high heat and bring to a boil.  Reduce heat to low, cover and simmer for 12 minutes or until the water is absorbed.  Add stevia to sweeten.

**This can also be made with Quinoa flakes instead, (Quinoa flakes will cook in just 90 seconds.)
