Preheat oven to 350 degrees, lightly grease cookie sheet with butter

Blend the following ingredients until combined:

2 cups shredded coconut (unsweetened)

1/2 cup quinoa flakes

2 tsp liquid lecithin (this is a flavorful nutrient-rich item that adds a creamy quality, found in health food stores)

2 tbls butter, softened

1/8 tsp white stevia powder, or 2 Tbls agave nectar


In a separate bowl, blend the following:

4 egg whites (using real eggs)

1/16 tsp stevia powder


Fold eggs into coconut mixture until well combined.  Make 2-inch balls, place 2 inches apart, bake 10 minutes or until golden brown.
