Mediterranean Spinach

1 cup or more of spinach

1 tbsp coconut oil or butter

2 cloves garlic, minced

2 tbsp minced shallots

2 tbsp chopped sun-dried tomatoes

2 tbsp toasted nuts (pine nuts or sliced almonds)

Optional – sprinkle of goat cheese

In a large pan, heat oil or butter.  Add shallots and stir over med heat until soft.  Add garlic and cook 1 minute longer.  Add spinach and goat cheese and stir until cheese is melted.  Add sun dried tomatoes and nuts and heat through.

Good as a side dish, or as stuffing for chicken!
