I am convinced Quinoa is one of the most versatile food items you will ever encounter.  It can be eaten cold or hot, and mixed with nearly anything – it creates great meals for breakfast, lunch or dinner.

Here is one of my student’s famous Quinoa lunch or dinner recipes.  We ate this cold!

Melissa’s Famous Quinoa Mish Mash Salad

1 cup cooked Quinoa (cooked according to package)

Chopped yellow squash or zuchini (to taste)

Chopped tomato (to taste)

Mix in avocado to taste

Mix in Sweet Potato Hummus (to taste)

Enjoy!
