This bread is SO tasty, but it is kind of flaky!  If you’re looking for the texture of bread for a sandwich or just a snack, this will definitely satisfy your craving!

5/8 cup almond flour (i bet you could use coconut flour too)

2 eggs

1/3 – 1/2 Medium Sweet Potato, (cooked and mashed – I cut mine up and boil it in water to expedite the cooking process)

1/8 cup coconut oil

Rosemary to taste

Mix up all ingredients and make into a mini pancake.  Place a very thin layer in an 8×8 pan and/or in a normal bread pan.  Bake for 20 minutes at 350.  Check sides for browning.
