Quinoa Tabouleh

This is one of my favorite go to meals, I make it on Sunday, and it becomes my lunch all week long!

2 cups quinoa, cooked according to package directions

1 cup chopped Italian parsley or cilantro

1 cup chopped mint, 1 cup green onions

1/2 cup chopped cucumbers

1/2 cup diced tomatoes

1/4 cup olive oil

1/4 cup lemon juice

1 tsp sea salt

In a large bowl, mix together quinoa, parsley, mint, green onions, cucumbers, and tomatoes

In a separate bowl, stir together lemon juice and sea salt. Whisk in olive oil.

Pour dressing over quinoa mixture and toss thoroughly to combine – can be served room temperature or cold.
