High Protein Pancakes

In a large bowl, mix together: 1 cup almond milk, 2 eggs, 2 tbsp melted and cooled coconut oil (+ more for pan,) 3 packets stevia

In a small bowl, whisk together: 3/4 cup almond meal, 1/4 cup flax meal, dash of sea salt, 3 tsp baking powder

Add dry ingredients to wet and stir just until blended.

In a skillet, melt a tbsp of coconut oil over med-high heat. Scoop out 1/4 cup portions of mixture, and pour into pan. Cook until top looks somewhat set, flip and cook for another minute. (Can add fresh or frozen berries to pancakes right after you flip them if you want!)
